Sugar can use either the brown sugar or the caster sugar. I prefer brown but use caster when I haven't got it in. The quantities vary slightly due to sweetness

These are a must!!!

Set oven to gas mark 4

Use a hand blender to quickly mix the flour, cocoa powder, baking powder, brown or caster sugar.

over a pan of boiled water melt the chocolate. Then I microwave the butter until melted, then stir it into the chocolate. Then added the vanilla extract. No photo, too many things happening at once.

Add it all together, and an egg

Quickly add in the oil, stir the mixture together. Do not beat or blend. And do not over stir. It should be lumpy, that what makes it sticky and yum!

I add Belgian chocolate chunks and fudge pieces.

I also add white chocolate chunks. Alternatively you can use raisins or dried cranberries or chopped walnuts and pecans.

Then fold it all in.

Lightly grease a square or oblong shallow baking tin with butter, a loaf tin would work for thicker brownies. Then spread the mixture into the tin. Doesn't need to be neat, it works itself flat.

Bake on middle shelf of the preheated oven for 15-20 minutes. Mine generally takes 18 but set at 15 and keep checking...

This is what it will look like when ready! Yum!

The test of it being ready is inserting a metal skewer or sharp knife in a few places in the tin and it being 'clean' when removed.

Using a pallet knife gently ease round the edges, then leave to cool completely.

Once cooled, use the pallet knife to section up into 9 for big or 12 for smaller. I do 12.

Walnut halves placed in a small sandwich bag and bashed once or twice.

Betty Crocker chocolate buttercream frosting

Voila!!! I've used chocolate buttercream frosting , about 1/2 tsp then sat broken walnut on top but dusted cocoa powder tastes good too!
