Heat pot on medium heat. Heat the two tablespoons of vegetable oil and half of the coconut cream, then add curry paste and stir to combine

Add fish sauce, sugar, stock, remaining coconut cream, tamarind, ginger, baby corn and bamboo, stir

Once pot is simmering add fish

Add kaffir lime leaves, simmer for 5-10 minutes until fish is just cooked. Add basil leaves

Transfer to serving bowls and serve with steamed rice
