We'll prepare the dough first. In a bowl combine 1/2 cup warm water, 1 tbs yeast, 2 tsp sugar and 1 tbls olive oil with 1/2 tsp salt. Mix and set aside for 5 minutes.
Next add the flour and mix with hand till you have a nice soft dough
Sprinkle the top of dough with olive oil.
Cover and let rise until double in size or 45 min. But in this cold weather I pre warm my oven for 10 minutes and put the dough there to rise.
That's the dough after it has risen.
Punch it down gently, to remove some of the gas bubbles.
Meanwhile, let's prepare our filling. You can use meat, chicken breast or lamb. Today I used chicken thigh. I grind it with garlic, cilantro, and cherry tomatoes.
Then I added: tahini, spices (curry powder, black pepper, garlic salt, pepper flakes and cumin) , and lemon. Mix them well.
The paste looks like tuna.
Cut the dough into 2 equal pieces .. and roll out about 10 inch long. Spread the fillings out. I only made one pizza with filling ingredients. The other half of the dough I used it for something else
Then sprinkle with some cheese
Then add: bell pepper, onions, and spinach
Add the rest of the cheese, and sprinkle it with Italian seasoning. Preheat oven on 450 and cook for about 30-35 minutes.
