Use a mandolin to slice your potato very thin.
Soak your potatoes in cold water to remove the starch. Then lay on a single layer on a piece of parchment paper. Drizzle with olive oil and seasonings.

Bake for 6 minutes in a 425 degree oven. Flip, then bake another 6 minutes. You might broil with door open for extra crispness. Watch closely. Remove and put on a cooling rack to crisp up.
